In the culinary universe few pairings are celebrated more
than salt and pepper. Forget the processed salt and dusty pepper, and instead
use
our Chef’s Blend with unrefined salt and a mix of the finest
ground peppercorns. Try sprinkling over fresh peas, with
fried perch filets, or mix into goat cheese and spread on hearty wheat crackers.

In the vast culinary universe, certain classic flavor pairings are
undeniably delicious. Chocolate and peanut butter, lemon and lime,
tomatoes and basil – destiny has brought these duos together
in mouth-watering harmony. Among these celebrated gastronomic couples,
the premiere duo is salt and pepper. Salt and pepper appear in nearly
every savory recipe and reside permanently on most dining tables.
Modern etiquette even tells us that salt and pepper are
“married” and one should never be passed across the
dinner table without the other. Our Salt Chef believes, as do we, that
salt and pepper are fundamental seasonings for nearly any dish and
should be respected and revered as key culinary ingredients. But what
impact can factory-created, mass-produced salt and pepper have on great
food? Forget the old pair of shakers filled with processed salt and
dusty, bland pepper. Our Chef’s Blend highlights, celebrates,
exalts these simple, yet crucial seasonings.
Our
Chef’s Blend starts with tantalizing Sel Gris, a
hand-harvested salt from France, revered for its mildly briny flavor.
Tellicherry black peppercorns from the Malabar Coast in India offer a
rich, deep peppery aroma. These prized peppercorns remain on the vine
longer than ordinary peppercorns to fully develop their robust flavor.
We then add red peppercorns to generate freshness and sweetness in this
zesty, salty blend. Finally, we add white peppercorns to add bite and
heat. White peppercorns are not the opposite of black peppercorns; in
fact, they are black peppercorns left to ripen more fully on the vine,
then washed or soaked to remove the outer shell and revealing their
glistening, spicy goodness.
We
don’t need to tell you how to use this blend; you already
know how to use salt and pepper! Any recipe that calls for salt and
pepper can be seasoned with Chef’s Blend. Try sprinkling it
over steamed spring asparagus or fresh peas. Season homemade chicken or
vegetable stock with Chef’s Blend. Add to roasted chicken or
grilled steaks to draw about the flavors of your meat. Enjoy this
versatile seasoning with goat cheese spread on wheat crackers or simply
with melted, unsalted butter and pour over popcorn.
