Early in the rigorous (but oh so tasty) product develop stage of the Beyond Blends collection, our Salt Chef came to us with a request to purchase several varieties of premium organic oils. We were certainly curious about how he would employ such an unexpected ingredient into our blends, but always open to the next gastronomic thrill, we encouraged him to proceed with this creative culinary angle.
As was customary during our R&D efforts, Chris (one of our founders) would receive at his law firm’s offices in Chicago a delivery from Traverse City of the Salt Chef’s latest taste test samples. By now the mailroom staff at the law firm were accustomed to handling these uniquely aromatic cardboard boxes from Northern Michigan. The day that the first sample of Citrus Wet Salt came to Chris, there must have been a particularly rough ride via overnight courier for that box, because it arrived in a half-mangled state. Gorgeous unrefined salts and premium blends spilled onto the law firm carpet from the inner depths of the cardboard box. Fortunately for everyone involved, the triple-zip locked baggie that contained the Citrus Wet Salt sample remained intact.
We say ‘fortunately’ because the sheer power of the organic oils used to craft our Citrus Wet Salt contain an astonishingly potent aroma and flavor… if that particular salt blend had escaped its container, Chris’s office would forever be imparted with the crisp scent of citrus (which maybe wouldn’t be a bad thing). Regardless, Citrus Wet Salt survived its harrowing trip from Traverse City, and we are sure glad it did! Our Salt Chef crafted this blend from exotic oils of organic blood orange and Clementine for a tangy-sweet bouquet that avoids any association with astringent cleaning products. To further hone this sweet citrus zing, we also add a bit of organic sugar to the blend, which beautifully balances the bright salinity of our Himalayan Pink salt. Finally, we add elegant fleur de sel to this blend, which ties together all the other flavors of our Citrus Wet Salt into a singular taste experience.
The cool thing about Citrus Wet Salt is that its thick consistency make it the ideal tool for infusing flavor into foods that have long cook times. For this blend, we purposefully keep the Himalayan Pink salt in its coarse form so that its citrus rich salinity literally melts onto your foods as you cook them. Of course Citrus Wet Salt also excels on the grill, especially on seafood. You can also try it in a flavor packed salt crust for chicken or whole fish.
