Salt Story

Truffle. (heart begins to race). Truffle. (rapid breathing ensues). Truffle. (cheeks flush crimson as every cell screams out in culinary anticipation). Truffle. (waves of tingly warmth oscillate through the body as the brain becomes singularly focused). Truffle. (intense expectation overwhelms the senses). Truffle...

Once you have taken your first taste of white or black truffle, it is tough to comprehend what your life was like before that moment. Exotic and earthy with unfathomable depth of mysterious and yet sensual sophistication—the aroma and flavor of this distinctive mushroom is truly one of the most profound gastronomical experiences available in the food world. It is no surprise that truffles are both prized and pricey (truffles are the second most expensive raw food in the world following saffron). There is almost an aphrodisiac quality to truffles as their decadent aroma and flavor become imprinted on our culinary memory.

It is hard to imagine what could be better than traditional truffle salt, but at Beyond the Shaker, we believe we have crafted the holy grail of taste with our Truffle Wet Salt. First, we sought out the highest-grade, cold infused, black truffle oil from France and white truffle oil from Italy, and then our Salt Chef carefully combined these gourmet oils with crunchy fleur de sel for a crisp and controlled touch of salinity. Finally, to perfect the color and textural experience, we add a bit of Hawaiian Black Lava to the blend, which provides our Truffle Wet Salt a black-pearl luminescence akin to Russian beluga caviar. The result is a blended salt of such intoxicating beauty, fragrance and flavor that many of our taste testers ate it directly out of the jar with no accompaniment but the spoon!

Our Truffle Wet Salt possesses a rich consistency that gives the home chef the ability to ‘paint’ on flavor using almost any food as a canvas. For instance, try brushing this salt onto pizza crust just prior to baking, or experiment with smearing it on top of pan-seared tilapia or monkfish. Mix in a bit of the Truffle Wet Salt with almost any rice, pasta or potato dish to add a deep tone of earthy flavor. This blend brings such an enormous flavor, you could candidly place a heaping spoon of it onto a shallow plate with a bit of olive oil, and then surround that truffle-dynamo with slices of crusty French bread, to produce an unbelievably simple and delicious appetizer.

  1. Extremely Versitile and Tasty...But Dangerously Addictive!!!

Posted by Todd A. on May 11, 2010

We've gone through several jars of this great wet salt over the past six months. I use this salt on cheese omelets and simple pasta dishes to great acclaim. My fifteen-year old son uses it to enhance popcorn, mushroom soup, beef, chicken--actually, just about everything we create in the kitchen except for desserts. Unfortunately, he's acquired a taste for truffles now, which can be an extraordinarily expensive proposition. As a compromise, my son gets his own jar of truffle salt with his name on it (literally) so he can enjoy a sublime truffle experience that is truly a bargain!

  2. Truffle bliss...

We used the Truffle wet salt on top of our butter for Thanksgiving, for homemade rolls. It was quickly used on top of the Turkey, the Mashed potatoes and pretty much on everything but the Pumpkin pie. People coo'ed over it! Such amazing truffle flavor, that even our foodiest foodie person who works for Oprah, loooved it! Such a great product!

  3. Didn't even know I LIKED truffles!

Posted by Charski on November 9, 2009

I've never eaten any sort of truffle before, so I ordered the sample packet of this salt. Oh boy, I'm seriously addicted already! It's DELICIOUS.

So far I've tried it out of hand, on fried eggs, and my fave - cheesetoast. I make this by putting a piece of foil on a small pan, turn the oven on to 400*, and lay 2 pieces of bread on the foil. (I like Ezekiel bread, which is a sprouted whole grains type, or sourdough.) Next get some extra-sharp cheddar (my fave is Tillamook Reserve White Extra Sharp) and cut it about 1/4 thick, to fit the bed. (Those baby loaves that Tillamook makes are the perfect size to just slice off and put on the Ezekiel bread.) Pop into the oven and check it in 8 to 10 minutes - you want the cheese JUST melted, not bubbling. Remove from the oven and sprinkle lightly with the truffle salt. Let stand a minute or two, so as to not burn off the roof of your mouth, and you will be in heaven!

P.S. the habanero salt is also excellent on cheesetoast....

This salt is amazing. I've started putting it on everything. Mashed potatoes, grilled corn, grilled steak, tossing it with popcorn, you name it. It's addictive.

  6. This stuff is amazing - if you love truffles, you can't beat it.

I thought using this salt might be weird, as I had never had a 'wet' salt before, but man is this good. I love truffles, and the smell & flavor of this salt really can't be beat. It is easy to use on just about everything.
